ABM     SAUSAGE GRAVY
(for Biscuits and Gravy)
 
INGREDIENTS
1      lb. Ground Breakfast Sausage (like Jimmy Dean)
2      Tablespoons flour
1      cup milk
1      cup heavy cream

INSTRUCTIONS
Cook ground sausage in large saucepan until done. Remove sausage and set aside. Pour off all but a thin film of fat from the pan and in its place add the 2 tablespoons of flour. Mix well. Then, stirring the mixture constantly with a wire whisk, pour in the milk and cream in a thin stream and cook over high heat until the gravy comes to a boil, thickens lightly and is smooth. Reduce the heat to low and simmer for 2 or 3 minutes to remove the taste of flour. Add cooked sausage and mix well. Serve over hot baking-powder biscuits for breakfast.
